Katie's Pimento Cheese


I've been wanting to try Katie's Pimento Cheese for ages. Every time she writes about it on Facebook, my mouth drools! So, she gave me the recipe awhile back but I had yet to make it. Then, I saw her a few days ago and guess what she made? You guessed it! I was in heaven! It was delicious and packed a kick of heat. YAY!


2 LB. EXTRA SHARP CHEDDAR CHEESE, GRATED 
LG JAR OF DICED PIMENTOS 
1/4 C DEHYDRATED ONION or 1/2 C ONION, MINCED 
2 CLOVES GARLIC, MINCED 
1/2 TSP CAYENNE PEPPER (BE CAREFUL. GETS HOTTER OVERNIGHT.) 
1/2 C MAYONAISE 
3 TSP SPICY MUSTARD 
1/4 C MILK 
2 TSP HORSERADISH 
PARSLEY FOR COLOR 


SOAK ONIONS IN MILK IN BOTTOM OF THE BOWL. ADD PIMENTOS W/JUICE. ADD ALL OTHER INGREDIENTS & MIX UNTIL THE RIGHT CONSISTENCY. CHILL FOR AN HOUR AND TASTE CHECK. ADD ADDITIONAL UNTIL RIGHT.
